Spicy Chicken Bread Boat

Ingredients
  

  • 1 Italian Loaf
  • 4 Boneless Skinless Chicken Thighs
  • 2 TBSP Salt
  • 1/2 TBSP Black Pepper
  • 1/2 TBSP Chipotle Chili Powder
  • 1/2 TBSP Cayenne Pepper
  • Oil
  • 1 Onion
  • 1/2 Orange Bell pepper
  • 1/2 Red Bell Pepper
  • Salt
  • 8 Slices Provolone Cheese
  • Parsley

Instructions
 

  • Slice an onion and bell peppers. Preheat a pan to low heat. Add oil to the pan and place the onions in. Cook for 10 minutes or until softened and then add the peppers. Cook for 30 minutes, stirring occasionally.
  • Pat the chicken dry with a paper towel and season with salt, pepper, chipotle chili powder, and cayenne pepper. Add oil to the chicken and mix to evenly coat the seasoning.
  • When the onions and peppers are about halfway done, preheat a pan to medium heat. Add oil to the pan and place the chicken to sear for 6 minutes on each side or until 165 degrees Fahrenheit. Set aside when done.
  • Cut an Italian loaf in half and take out a small amount of the bread to form a boat.
  • Add in the chicken, then the onions and peppers, and finally top it with the provolone cheese. Place in the oven on broil for 2-3 minutes. Be careful and keep an eye on it because broil will be very quick.
  • Garnish with parsley and cut into slices to portion. Enjoy.
