Nothing disappears faster at a cookout than a cheesesteak cut into portions. I made six full subs on the Halo griddle and they were gone in minutes. Simple ingredients, hot griddle, no shortcuts.

What You Need (Makes 6 Subs)

  • 3 lbs shaved ribeye
  • 6 sesame sub rolls
  • 2 large onions, diced
  • 12 slices Cooper Sharp cheese
  • Neutral oil

How I Made Them

  1. Heat the griddle. Get the Halo ripping hot on one side, medium on the other. Oil it down.
  2. Onions first. Diced onions on the medium zone until soft and just starting to brown.
  3. Ribeye on the hot side. Spread the shaved ribeye out, let it sear, then chop and flip. Mix in the onions.
  4. Cheese it. Portion the meat into 6 piles, lay 2 slices of Cooper Sharp on each, and let it melt into the beef.
  5. Roll on top. Cap each pile with a sesame roll, let it steam for 30 seconds, then scoop and flip.

The Cookout Move

Wrap each sub tight in foil for a minute — it steams the roll and sets the cheese. Then cut each one into thirds. Six subs turns into 18 handheld portions, and nobody has to commit to a whole sandwich (though plenty came back for three).

Cooper Sharp is the non-negotiable here. Whiz has its fans, but that sharp melt against seared ribeye and sesame? That’s the sandwich.
